5-Herb Kaiser Buns You Can Make At Home

While plain Kaiser buns are certainly delicious, it is really hard to beat flavored, herb-infused Kaiser buns. The best thing is, you can even make them at home. This recipe takes a few hours to prepare since you need to let the dough rise twice, but if you just follow along with the instructions, you will soon have delicious, 5-herb Kaiser buns you can use to make sandwiches or simply eat on their own alongside dinner.

To make 12 large Kaiser buns, you will need the following ingredients:

  • 1 package active, dry yeast
  • 1 cup warm water
  • 2 tablespoons honey
  • 2 tablespoons melted butter
  • 1 teaspoon kosher salt
  • 3 cups all-purpose flour
  • 1 egg white
  • 1 tablespoon cold water
  • 2 tablespoons fresh parsley, minced
  • 1 tablespoon fresh rosemary, minced finely
  • 1 tablespoon fresh basil, minced
  • 1 tablespoon fresh thyme, minced
  • 1 teaspoon dill weed, minced
  • 2 tablespoons sesame seeds

Start by combining the honey, yeast, and water in a large mixing bowl. Stir to make sure all of the yeast is wet, and then let your mixture sit for about 10 minutes. You should start to see foam and bubbles.

Add 2 cups of flour to the bowl, and stir to combine. Add the melted butter, salt, and remaining flour, and keep mixing. Then, place the dough on a countertop or other hard surface, and knead it for 10 minutes. The dough should become smooth and elastic, and it should lose its stickiness.

Place the dough ball in a large, lightly greased bowl or container with a lid. Put the lid on loosely. Let the dough rise for 90 minutes or until it has doubled in size. 

Press down on the dough to remove excess air. Place the dough back on the counter, and sprinkle it with the various chopped herbs. Knead it for 2–3 minutes to incorporate all of the herbs.

Let the dough rest for another 10 minutes on the counter, and then divide it into 12 pieces. Shape each into a roll. Spread the rolls out, about 3 inches apart, on a baking sheet. Let rise for another 30 minutes. Beat the egg white and water together. Brush each roll with the egg white and water mixture, and then sprinkle the rolls with sesame seeds.

Bake your rolls for 25 minutes at 40 degrees F. Remove from the oven, let cool, and enjoy your Kaiser buns as you prefer.
